Ingredients
- 2 cups jasmine rice
- 1 400 ml can coconut milk
- 1 tsp salt
- 1/2 cup anchovies, fried
- 1/2 cup roasted peanuts
- 1 whole cucumber, sliced
- 1/4 cup sambal sauce
Instructions
- Rinse the jasmine rice in a sieve under cold running water until the water runs clear.
- In a medium-sized pot, combine the rinsed rice, coconut milk, salt, and 1 1/2 cups of water. Stir to combine.
- Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, remove the pot from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork to separate the grains.
- To serve, place a portion of the coconut rice on a plate. Top with the fried anchovies and roasted peanuts, arranging the cucumber slices on the side.
- Add a spoonful of sambal sauce to the plate to taste.
