Ingredients

  • 1 whole chicken, about 3-4 pounds
  • 1 cup rice, uncooked
  • 1 piece ginger, sliced
  • 2 cloves garlic, minced
  • 2 stalks green onions, chopped
  • 2 Tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • salt and pepper to taste

Instructions

  1. In a large pot, bring enough water to a boil to cover the chicken. Add the whole chicken, ginger slices, and garlic. Reduce heat to low and simmer for about 30-40 minutes or until the chicken is cooked through to an internal temperature of 165°F (75°C).
  2. Remove the chicken from the pot using tongs and place it in a bowl of ice water to cool completely. This step helps to tighten the skin of the chicken, giving it a firm texture.
  3. Measure 2 cups of the chicken broth from the cooking pot and pour it into a rice cooker. Add the uncooked rice and cook it according to the rice cooker’s instructions until the rice is fluffy and fragrant.
  4. In a small bowl, mix soy sauce, sesame oil, sugar, and a small pinch of salt. Stir until the sugar dissolves and the sauce is well combined.
  5. Once the chicken has cooled, remove it from the ice water and pat it dry with paper towels. Chop it into serving pieces using a sharp knife.
  6. Serve the chicken on a platter with the fragrant rice. Garnish with chopped green onions and drizzle the sauce over the chicken pieces. Accompany with chili sauce and ginger paste, if desired.
