Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 cup yogurt
  • 2 tbsp ginger garlic paste

  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 2 whole onions, sliced
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • 10-12 saffron strands soaked in milk

Instructions

  1. Soak basmati rice in water for 30 minutes. Drain and set aside.
  2. Marinate the chicken with yogurt, ginger garlic paste, cumin powder, coriander powder, garam masala, turmeric powder, and salt, ensuring the chicken is evenly coated. Allow to marinate in the refrigerator for at least 1 hour.
  3. Heat oil in a pan over medium heat and sauté the sliced onions until they turn golden brown. Remove half of the onions and set aside for layering.
  4. In a large pot, layer the marinated chicken, half of the fried onions, mint leaves, and coriander leaves. Top with half of the soaked rice, spreading it evenly.
  5. Repeat the layering with the remaining chicken, fried onions, mint leaves, coriander leaves, and rice. Pour the saffron-infused milk over the top to distribute evenly.
  6. Cover the pot with a tight-fitting lid and cook on low heat for 45 minutes or until the rice is fully cooked and the chicken is tender. Avoid removing the lid during cooking to maintain steam.
  7. Let the biryani rest for 5 minutes before serving.
