Ingredients

  • 1 medium jicama, peeled and julienned
  • 1 whole cucumber, sliced
  • 1 cup pineapple chunks
  • 1/2 block firm tofu, cubed
  • 1/4 cup roasted peanuts, crushed

Instructions

  1. Mix 1/4 cup of peanut butter, 2 Tbsp of tamarind paste, 1 Tbsp of sugar, and 1 Tbsp of chili paste in a bowl to prepare the peanut sauce. Add water gradually, stirring until the sauce reaches the desired consistency.
  2. In a large bowl, combine the julienned jicama, sliced cucumber, pineapple chunks, cubed tofu, and 1/4 cup of crushed peanuts.
  3. Pour the prepared peanut sauce over the salad mixture and toss well to ensure all components are evenly coated.
  4. Garnish the Indian Rojak with additional crushed peanuts and a pinch of chili powder before serving.
