Ingredients

  • 1 1/2 lbs chicken thighs, boneless and skinless
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1/4 tsp black pepper, freshly ground
  • 1 tbsp toasted sesame seeds, for garnish
  • 1 tbsp green onions, chopped, for garnish

Instructions

  1. In a bowl, combine soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, and black pepper. Mix well to combine.
  2. Cut the chicken thighs into bite-sized pieces and place them in a resealable plastic bag or shallow dish.
  3. Pour the marinade over the chicken, making sure it is evenly coated. Marinate in the refrigerator for at least 1 hour, or overnight for best results.
  4. Preheat the grill to medium-high heat, around 375°F (190°C). Thread the marinated chicken pieces onto skewers, leaving a small space between each piece to ensure even cooking.
  5. Grill the skewers for 10 to 12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Ensure the internal temperature reaches 165°F (75°C).
