Ingredients

  • 1 medium chicken breast, diced
  • 1/2 cup mandarin orange segments
  • 2 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 tsp sesame oil
  • 1 cup mixed vegetables, such as bell peppers, snap peas, and carrots
  • 2 Tbsp sesame seeds
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 3 Tbsp vegetable oil
  • 1/4 cup chicken broth
  • 2 Tbsp cornstarch

Instructions

  1. In a small bowl, whisk together soy sauce, honey, sesame oil, garlic, ginger, and cornstarch until smooth. Set aside.
  2. Heat 2 Tbsp of vegetable oil in a large pan over medium-high heat. Add diced chicken and cook for 5-7 minutes until browned and cooked through.
  3. Add the remaining 1 Tbsp of vegetable oil and mixed vegetables to the pan. Cook for 3-4 minutes until the vegetables start to soften.
  4. Stir in the soy sauce mixture and chicken broth into the pan. Mix well to combine.
  5. Bring the mixture to a simmer and cook for 2-3 minutes until the sauce thickens.
  6. Gently add mandarin orange segments and sesame seeds to the pan, stirring to mix evenly.
  7. Serve the stir-fry hot over rice or noodles.
