Ingredients
- 2 lbs beef chuck, cut into chunks
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1/2 cup soy sauce
- 1/4 cup vinegar
- 1 tsp sugar
- 2 large carrots, sliced
- 2 large potatoes, cubed
Instructions
- Pat the beef chunks dry with paper towels and season with salt and pepper.
- In a Dutch oven, heat 2 tablespoons of oil over medium-high heat.
- Sear beef in batches until browned on all sides, then set aside.
- In the same pot, saute onions and garlic until onions are translucent and garlic is fragrant, about 2-3 minutes.
- Return beef to the pot and stir in beef broth, soy sauce, vinegar, and sugar.
- Add 2 bay leaves and bring to a simmer. Cover and cook on low heat for 1.5 hours until beef is tender.
- Stir in carrots and potatoes, and simmer covered for another 30 minutes until vegetables are tender.
- Adjust seasoning with additional salt and pepper to taste.
- Remove bay leaves before serving. Serve hot over steamed rice.
