Ingredients
- 8 oz mee goreng noodles
- 1/2 cup tofu, diced
- 1 cup shrimp, peeled and deveined

- 1 tsp curry powder
- 2 tbsp chili paste
Instructions
- Cook the mee goreng noodles according to the package instructions. Drain and set aside.
- Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the diced tofu and cook until golden brown. Remove and set aside.
- In the same wok, add the shrimp and stir-fry until they turn pink. Remove and set aside.
- If needed, add another tablespoon of oil to the wok. Stir-fry the mixed vegetables until tender-crisp.
- Return the tofu and shrimp to the wok. Add the cooked noodles, soy sauce, tomato ketchup, curry powder, and chili paste.
- Toss everything together until well combined and heated through, ensuring the sauce coats all ingredients evenly.
- Serve the mee goreng in a white dish on a light marble countertop.
