  • 1 lb lamb shoulder, cubed

  • 1 whole avocado leaf
  • 1 whole onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 cup orange juice
  • 1/4 cup apple cider vinegar

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a blender, combine the soaked guajillo chilies, onion, garlic, cumin, orange juice, and apple cider vinegar. Blend until smooth.
  3. Place the lamb in a large bowl and pour the marinade over it. Toss to coat the meat evenly.
  4. Wrap the marinated lamb in avocado leaves and wrap with parchment paper, forming individual packets called mixiotes.
  5. Arrange the mixiotes in a baking dish and cover with foil. Bake for 2 hours, or until the meat is tender and cooked through.
  6. Carefully open the packets and serve the mixiotes hot with salsa verde, rice, and beans.
