- Toast the dried ancho chilies in a dry skillet over medium heat until fragrant, about 2-3 minutes per side. Remove from heat and soak in hot water for 30 minutes until softened.
- In the same skillet, toast the almonds over medium heat until golden brown, about 5-6 minutes. Transfer to a blender.
- Add the Mexican chocolate to the blender with the almonds and blend until smooth.
- In a large pot, heat 1 tablespoon of oil over medium heat. Add the minced garlic, chopped onion, and cinnamon, and sauté until the onion is softened, about 5 minutes.
- Drain the soaked chilies, discarding the soaking liquid, and add them to the pot. Stir to combine the ingredients.
- Simmer the mixture on low heat for 1-2 hours, stirring occasionally to prevent sticking. If the sauce becomes too thick, add water in small amounts to achieve the desired consistency.
- Use the Mole Poblano as a sauce over cooked chicken, enchiladas, or rice, allowing the flavors to meld and enhance the dish.
