Ingredients

  • 8 oz rice noodles
  • 1/2 cup tamarind paste
  • 2 Tbsp fish sauce
  • 2 Tbsp sugar
  • 2 Tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs
  • 1 cup bean sprouts
  • 1/4 cup peanuts, chopped
  • 1/4 cup cilantro, chopped

Instructions

  1. Soak rice noodles in warm water for 1 hr. Drain and set aside.
  2. In a small bowl, mix tamarind paste, fish sauce, and sugar. Set aside.
  3. In a large pan, heat vegetable oil over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
  4. Add shrimp and cook for 3-4 minutes until pink. Push shrimp to one side of the pan.
  5. Crack eggs into the pan and scramble until fully cooked.
  6. Add soaked noodles and tamarind sauce to the pan. Toss thoroughly to combine.
  7. Add bean sprouts and chopped peanuts. Stir to integrate evenly.
  8. Transfer Pad Thai to a serving dish and garnish with chopped cilantro and lime wedges.
