  • 1 whole cinnamon stick

  • 1 whole onion, halved
  • 4 cups beef broth
  • 8 cups water
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 8 oz rice noodles
  • 1/2 lb sirloin steak, thinly sliced
  • 1 cup bean sprouts
  • 1 whole lime, cut into wedges
  • 1 whole red chili, sliced
  • 1 cup basil leaves
  • 1 cup cilantro leaves
  • 1 cup mint leaves
  • 1 cup Thai basil leaves

Instructions

  1. In a dry skillet, toast the star anise, cinnamon stick, and cloves over medium heat until fragrant.
  2. In a large pot, add the toasted spices, sliced ginger, halved onion, beef broth, and water. Bring to a boil, then reduce heat to low and simmer for 1.5 hours.
  3. Strain the broth to remove solids and return it to the pot. Stir in the fish sauce and sugar. Taste and adjust seasoning if necessary.
  4. Cook the rice noodles according to package instructions. Drain and divide the noodles among serving bowls.
  5. Top each bowl of noodles with thinly sliced sirloin steak and bean sprouts.
  6. Pour the hot broth over the noodles and beef in each bowl to cook the beef slightly.
  7. Serve the Pho with lime wedges, sliced chili, and fresh herbs such as basil, cilantro, mint, and Thai basil on the side.
