- 1 pound ground beef
- 1 Tbsp taco seasoning mix
- 1/2 cup water
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup cilantro, chopped
- 1/2 cup sour cream
Instructions
- In a skillet, cook the ground beef over medium heat until no longer pink, then drain the excess fat.
- Stir in the taco seasoning mix and water. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes, stirring occasionally until well combined and thickened.
- Heat a greased skillet over medium heat. Place one tortilla in the skillet and sprinkle with 1/2 cup of cheese, a fourth of the beef mixture, and 1 tablespoon of cilantro. Top with another tortilla.
- Cook the quesadilla over medium heat until the cheese is melted and the tortillas are golden brown, approximately 2-3 minutes on each side. Carefully flip using a spatula.
- Slice the quesadilla into wedges and serve with sour cream on the side.
