  • 4 medium beets, scrubbed and trimmed
  • 2 tablespoons olive oil
  • 1/2 cup crumbled goat cheese
  • 1/3 cup walnuts, toasted
  • 3 cups mixed salad greens
  • 1/4 cup balsamic vinaigrette

Instructions
