Ingredients
- 8 oz dangmyeon (Korean glass noodles)
- 1/2 lb beef, thinly sliced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup carrots, julienned
- 1 cup spinach, blanched and chopped
- 1 cup bell peppers, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 2 tbsp sugar
- 1 tbsp vegetable oil
- 1 tsp black pepper
- 1 tsp sesame seeds, for garnish
Instructions
- Soak the dangmyeon noodles in hot water for 20 minutes, then drain and set aside.
- In a bowl, marinate the beef with 2 tablespoons of soy sauce, 1 tablespoon of sugar, minced garlic, and black pepper for 15 minutes.
- Heat the vegetable oil in a pan over medium-high heat. Stir-fry the marinated beef until fully cooked, then remove from the pan and set aside.
- In the same pan, stir-fry the sliced onion, julienned carrots, and bell peppers until they are tender, about 4 to 5 minutes.
- Add the blanched and chopped spinach and the soaked noodles to the pan, tossing to combine with the vegetables. Pour in the remaining marinade from the beef and stir well to combine. Drizzle with sesame oil.
- Transfer the japchae to a serving dish and garnish with sesame seeds before serving.
