Ingredients
- 1 cup rice, long-grain white
- 1/2 cup parsley, fresh, chopped
- 1/4 cup mint, fresh, chopped
- 1 whole onion, finely diced
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 jar grape leaves
Instructions
- Combine long-grain white rice, chopped parsley, chopped mint, diced onion, lemon juice, olive oil, salt, and black pepper in a bowl.
- Rinse grape leaves under cold water to remove excess brine, then pat dry.
- Lay a grape leaf flat, shiny side down, and place a spoonful of the rice mixture in the center.
- Fold the sides over the filling and roll tightly from the bottom to the top.
- Continue with the remaining leaves and filling.
- Arrange stuffed grape leaves in a pot, seam side down, and cover with water.
- Place a heatproof plate on top to keep them submerged, then bring the water to a simmer.
- Simmer gently over low heat for 45 minutes until the rice is tender.
- Cool slightly and serve warm or at room temperature.
