Ingredients

  • 1 cup rice, long-grain white
  • 1/2 cup parsley, fresh, chopped
  • 1/4 cup mint, fresh, chopped
  • 1 whole onion, finely diced
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 jar grape leaves

Instructions

  1. Combine long-grain white rice, chopped parsley, chopped mint, diced onion, lemon juice, olive oil, salt, and black pepper in a bowl.
  2. Rinse grape leaves under cold water to remove excess brine, then pat dry.
  3. Lay a grape leaf flat, shiny side down, and place a spoonful of the rice mixture in the center.
  4. Fold the sides over the filling and roll tightly from the bottom to the top.
  5. Continue with the remaining leaves and filling.
  6. Arrange stuffed grape leaves in a pot, seam side down, and cover with water.
  7. Place a heatproof plate on top to keep them submerged, then bring the water to a simmer.
  8. Simmer gently over low heat for 45 minutes until the rice is tender.
  9. Cool slightly and serve warm or at room temperature.
