Ingredients

  • 1 4 oz can green chilies, chopped
  • 1 cup sour cream
  • 1 Tbsp vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C).

  3. Add enchilada seasoning mix, onion, and green chilies to the beef. Cook for 5 minutes, stirring occasionally.
  4. Wrap tortillas in a damp paper towel and microwave for 1 minute to soften.
  5. Fill each tortilla with approximately 2-3 tablespoons of the beef mixture, roll up, and place seam-side down in a greased baking dish.
  6. Pour enchilada sauce evenly over the rolled tortillas, then sprinkle with cheddar cheese.
  7. Bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbly.
  8. Allow enchiladas to cool for a few minutes before serving with a spoonful of sour cream per serving.
