Ingredients

  • 8 whole rice paper spring roll wrappers

  • 1 whole avocado, sliced
  • 1 batch Vegan Dipping Sauce

Instructions

  1. Wash, peel, and chop all the vegetables as needed.
  2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens, then remove and place it flat on a clean surface.
  3. In the center of the wrapper, place a small handful of shredded lettuce, shredded carrots, thinly sliced cucumber, fresh mint leaves, chopped cilantro, and avocado slices.
  4. Gently fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to form a spring roll.
  5. Repeat this process with the remaining ingredients, softening each rice paper wrapper before filling and rolling.
  6. Arrange the spring rolls on a serving platter and serve them with the Vegan Dipping Sauce on the side.
