Ingredients

  • 2 lbs beef bones
  • 6 cloves garlic, minced
  • 2 inch piece ginger, sliced

  • 4 whole star anise
  • 2 whole cinnamon sticks
  • 1 tbsp coriander seeds
  • 1 tbsp fennel seeds
  • 1 tbsp sugar
  • 3 Tbsp fish sauce
  • 8 oz rice noodles

Instructions

  1. In a large pot, char garlic, ginger, and onion over medium heat until fragrant, about 3-5 minutes.
  2. Add beef bones, star anise, cinnamon, coriander seeds, and fennel seeds. Stir in sugar.
  3. Cover the ingredients with water and bring to a boil over high heat. Skim off any impurities that rise to the surface.
  4. Reduce heat to low and simmer for 2 hours, skimming occasionally for impurities.
  5. Strain the broth through a fine-mesh strainer and return it to the pot. Season with fish sauce to taste.
  6. Cook rice noodles according to package instructions until tender, then drain.
  7. Divide the cooked noodles among bowls, top with thinly sliced beef, and pour the hot broth over the top.
  8. Serve with garnishes such as bean sprouts, Thai basil, lime wedges, and chili slices.
