Ingredients
- 2 lbs beef bones
- 6 cloves garlic, minced
- 2 inch piece ginger, sliced

- 4 whole star anise
- 2 whole cinnamon sticks
- 1 tbsp coriander seeds
- 1 tbsp fennel seeds
- 1 tbsp sugar
- 3 Tbsp fish sauce
- 8 oz rice noodles

- In a large pot, char garlic, ginger, and onion over medium heat until fragrant, about 3-5 minutes.
- Add beef bones, star anise, cinnamon, coriander seeds, and fennel seeds. Stir in sugar.
- Cover the ingredients with water and bring to a boil over high heat. Skim off any impurities that rise to the surface.
- Reduce heat to low and simmer for 2 hours, skimming occasionally for impurities.
- Strain the broth through a fine-mesh strainer and return it to the pot. Season with fish sauce to taste.
- Cook rice noodles according to package instructions until tender, then drain.
- Divide the cooked noodles among bowls, top with thinly sliced beef, and pour the hot broth over the top.
- Serve with garnishes such as bean sprouts, Thai basil, lime wedges, and chili slices.
