Ingredients
- 3 cups cooked jasmine rice, preferably day-old
- 2 Tbsp vegetable oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 Tbsp soy sauce
- 2 tsp fish sauce
- 2 eggs, beaten
- 1/2 cup cooked chicken, shrimp, or tofu (optional)
- 1/4 cup green onions, chopped
Instructions
- Heat 1 Tbsp of oil in a large wok or skillet over medium heat.
- Add minced garlic and cook until fragrant, about 30 seconds.
- Add mixed vegetables and stir-fry for 2-3 minutes until slightly softened.
- Push vegetables to one side of the wok and add remaining 1 Tbsp of oil.
- Pour beaten eggs into the cleared side of the wok and scramble until cooked through.
- Add cooked jasmine rice, soy sauce, and fish sauce to the wok.
- Stir-fry everything together for 2-3 minutes until well combined.
- If desired, add cooked protein choice and chopped green onions, toss to combine.
