Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup red bell pepper, diced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup cheddar cheese, shredded
  • 8 whole flour tortillas
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup salsa

Instructions

  1. In a large bowl, mix black beans, corn, red bell pepper, ground cumin, and chili powder until thoroughly combined.
  2. Lay one tortilla on a flat surface. Spoon some of the bean mixture onto one half of the tortilla. Top with shredded cheddar cheese and chopped cilantro, then fold the tortilla in half to enclose the filling.
  3. Repeat the process with the remaining tortillas and filling.
  4. Preheat the air fryer to 360°F (182°C).
  5. Arrange the quesadillas in the air fryer basket in a single layer without overlapping. Cook in batches if needed.
  6. Air fry each batch for 8-10 minutes, flipping halfway through the cooking time, until the tortillas are crispy and golden brown.
  7. Serve the quesadillas hot with a side of salsa for dipping.
