Ingredients
- 4 medium eggs

Instructions
- Prepare a steamer by placing a steamer rack in a large pot filled with water, making sure the water does not touch the rack.
- In a bowl, gently beat the eggs, then add dashi stock, soy sauce, mirin, and salt. Mix until well combined without creating bubbles.
- Distribute shrimp, chicken, mushrooms, and ginkgo nuts evenly among the 4 chawanmushi cups.
- Carefully pour the egg mixture over the fillings in each cup, ensuring an even distribution without disturbing the ingredients.
- Cover the cups with lids or aluminum foil to prevent water from entering during steaming.
- Place the cups in the steamer rack and steam over low heat for about 15 to 20 minutes until the custard is set but still slightly jiggly in the center.
- Remove the cups from the steamer and let them sit for a minute to settle.
