These citrus grilled shrimp skewers are juicy and flavorful, thanks to a zesty chili lime marinade that enhances every bite.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon chili powder
  • 2 cloves garlic, minced
  • 1 teaspoon lime zest
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • wooden skewers

Instructions

  1. Soak the wooden skewers in water for at least 30 minutes to prevent burning.
  2. In a bowl, whisk together olive oil, lime juice, honey, soy sauce, chili powder, garlic, lime zest, black pepper, and salt to make the marinade.
  3. Add the shrimp to the marinade, and toss well to coat completely. Allow the shrimp to marinate in the refrigerator for 20 to 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated shrimp onto the skewers, about 4 to 5 shrimp per skewer.
  6. Grill the skewers for about 2 to 3 minutes on each side or until the shrimp are opaque and cooked through.
  7. Remove from the grill and serve immediately, garnished with lime wedges if desired.
