Dongpo Pork (东坡肉)

Dongpo Pork is a traditional Chinese dish dating back to the Song Dynasty. It features tender, braised pork belly enveloped in a rich soy sauce glaze. The slow-cooked process allows the pork to absorb aromatic flavors, resulting in a melt-in-the-mouth texture. With a harmonious balance of sweet and savory notes, Dongpo Pork is a delight for pork aficionados. While it requires patience during preparation, the resultant dish is a culinary reward that many find irresistible.

Ingredients

  • 2 lb pork belly
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1 cup shaoxing wine
  • 6 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 pieces star anise
  • 1 stick cinnamon
  • 1 tbsp oil

Instructions

  1. Cut the pork belly into large cubes.
  2. In a pot, heat the oil over medium-high heat and brown the pork belly on all sides.
  3. Reduce the heat to medium and add garlic, ginger, star anise, and cinnamon. Stir for 1 minute to release their aromas.
  4. Pour in the soy sauce, brown sugar, and Shaoxing wine. Stir to combine.
  5. Lower the heat, cover the pot, and let it simmer for 1.5 to 2 hours, until the pork is tender.
  6. Uncover and continue to simmer until the sauce thickens to your desired consistency.
  7. Serve the Dongpo Pork with steamed rice.
