Ingredients

  • 2 cups glutinous rice, soaked overnight
  • 1/2 cup dried red dates, chopped

  • 1/4 cup dried lotus seeds
  • 1/4 cup dried apricots, chopped
  • 1/4 cup walnuts, chopped
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup sweet osmanthus sauce

Instructions

  1. Rinse the soaked glutinous rice under cold water and steam it over high heat for about 30 minutes or until tender. Set aside to cool slightly.
  2. In a pan over medium heat, combine the vegetable oil and sugar. Stir until the sugar melts and forms a caramel.
  3. Add the dried red dates, goji berries, longan, lotus seeds, apricots, and walnuts to the caramel mixture. Stir to coat evenly.
  4. In a large bowl, layer half of the cooked glutinous rice, then add the fruit and nut mixture evenly over the top. Cover with the remaining rice.
  5. Drizzle the sweet osmanthus sauce evenly over the top layer of the rice.
  6. Cover the bowl tightly with a plate and steam the layered rice for an additional 10 minutes to combine flavors.
  7. Carefully remove from the steamer and allow to cool for a few minutes before serving.
