Gaeng Massaman

Ingredients

  • 1 lb beef, cubed

  • 2 Tbsp Massaman curry paste
  • 1 cup potatoes, diced

Instructions

  1. In a large pot, heat 1 Tbsp of oil over medium heat.
  2. Add the Massaman curry paste to the pot and cook for 1 minute, stirring frequently until aromatic.
  3. Add the cubed beef and cook until all sides are browned.
  4. Stir in the coconut milk and bring the mixture to a gentle simmer.
  5. Add the diced potatoes to the pot and simmer for about 20 minutes, or until the potatoes are tender.
  6. Serve the Gaeng Massaman hot over steamed rice, garnished with peanuts.
