Ingredients

  • 1 whole duck, cleaned and dried
  • 1/2 cup salt
  • 2 Tbsp sugar
  • 2 Tbsp soy sauce
  • 4 cloves garlic, minced
  • 2 Tbsp ginger, minced

Instructions

  1. Mix 1/2 cup salt, 2 Tbsp sugar, 2 Tbsp soy sauce, 4 minced garlic cloves, and 2 Tbsp minced ginger in a bowl to create the marinade.
  2. Rub the marinade thoroughly over the entire duck, including inside the cavity. Place the duck in a dish, then cover and refrigerate for 24 hours to marinate.
  3. After marination, hang or place the duck in a cool, well-ventilated area to air-dry for 24 hours, ensuring it is not exposed to direct sunlight.
  4. Preheat the oven to 350°F (175°C). Place the duck on a roasting rack in a baking tray and roast for 1.5 hours, basting every 30 minutes with its juices.
  5. Increase the oven temperature to 425°F (220°C) to crisp the skin, roasting for an additional 30 minutes.
  6. Remove the duck from the oven and let it rest for at least 15 minutes before carving. Slice and serve the duck with sides of your choice.
