Ingredients
- 1 whole duck, cleaned and dried
- 1/2 cup salt
- 2 Tbsp sugar
- 2 Tbsp soy sauce
- 4 cloves garlic, minced
- 2 Tbsp ginger, minced
Instructions
- Mix 1/2 cup salt, 2 Tbsp sugar, 2 Tbsp soy sauce, 4 minced garlic cloves, and 2 Tbsp minced ginger in a bowl to create the marinade.
- Rub the marinade thoroughly over the entire duck, including inside the cavity. Place the duck in a dish, then cover and refrigerate for 24 hours to marinate.
- After marination, hang or place the duck in a cool, well-ventilated area to air-dry for 24 hours, ensuring it is not exposed to direct sunlight.
- Preheat the oven to 350°F (175°C). Place the duck on a roasting rack in a baking tray and roast for 1.5 hours, basting every 30 minutes with its juices.
- Increase the oven temperature to 425°F (220°C) to crisp the skin, roasting for an additional 30 minutes.
- Remove the duck from the oven and let it rest for at least 15 minutes before carving. Slice and serve the duck with sides of your choice.
