  • 4 tablespoons mirin

  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • 1 tablespoon chopped green onions, for garnish

Instructions

  1. Pound the pork loin chops to flatten them into thin pieces.
  2. Dredge each pork chop first in all-purpose flour, then dip them in the beaten eggs, and finally coat them with panko breadcrumbs.
  3. In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded pork chops in batches until each is golden brown and cooked through, about 3-4 minutes per side. Set them aside on paper towels to drain excess oil.
  4. In the same skillet, add the sliced onions and sauté until softened, about 5 minutes.
  5. Pour in the dashi broth, soy sauce, mirin, and sugar. Stir well and bring the mixture to a simmer.

  7. Beat the remaining eggs and pour them evenly over the pork and onions. Cover the skillet and allow to cook until the eggs are set, about 3-4 minutes.
  8. Mix the cornstarch with water to create a slurry. Drizzle this slurry over the mixture, stirring gently, to thicken the sauce slightly.
  9. Serve the katsudon by placing portions over bowls of steamed rice. Garnish with chopped green onions.
