Ingredients

  • 4 packets ramen noodles
  • 8 cups chicken or vegetable broth
  • 4 large eggs
  • 1 lb pork belly, thinly sliced
  • 1/2 cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tsp chili paste

Instructions

  1. Bring the chicken or vegetable broth to a simmer in a pot over medium heat.
  2. Place the eggs into a pot of boiling water and cook for 6 minutes. Immediately transfer the eggs to a bowl of ice water to stop the cooking process. Once cooled, peel the eggs and set them aside.
  3. In a shallow dish, combine the soy sauce, mirin, and sesame oil. Marinate the sliced pork belly in this mixture for at least 30 minutes.
  4. Heat a pan over medium-high heat and cook the marinated pork belly slices until caramelized, about 3-4 minutes on each side.
  5. Boil the ramen noodles according to the package instructions, then drain and set aside.
  6. To assemble, divide the noodles among four bowls. Pour the simmering broth over the noodles. Top each bowl with slices of caramelized pork, a soft-boiled egg cut in half, and your choice of toppings such as green onions, bamboo shoots, and chili paste.
