Red Cooked Pork is a classic Chinese dish cherished for its savory and mildly sweet flavor profile. This traditional recipe involves simmering pork belly in a fragrant blend of soy sauce, ginger, garlic, and spices until tender, resulting in a rich infusion of flavors. The dish is named for the reddish hue of the pork after cooking. Often enjoyed during festive occasions and family gatherings, this delightful dish pairs excellently with steamed rice and vegetables.

Ingredients

  • 1 lb whole pork belly, skin on
  • 1/2 cup soy sauce
  • 1/4 cup rice wine
  • 1/4 cup brown sugar
  • 4 green onions, chopped
  • 3 garlic cloves, minced
  • 1 thumb-sized piece ginger, sliced
  • 2 star anise

Instructions

  1. Place the pork belly in a pot and cover with water. Bring to a boil, then simmer for 5 minutes. Remove the pork, rinse it under cold water, and cut into chunks.
  2. In the same pot, combine the soy sauce, rice wine, brown sugar, green onions, garlic, ginger, and star anise. Return the pork to the pot.
  3. Bring the mixture to a boil, then reduce the heat to low. Simmer gently for 1 hour, or until the pork is tender and infused with the flavors.
  4. Remove from heat and let it rest for a few minutes before serving. Serve the Red Cooked Pork hot, accompanied by steamed rice and vegetables.
