This easy sheet pan salmon features a tangy pineapple glaze and is paired with roasted broccoli for a complete meal.

Ingredients

  • 4 salmon fillets
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 head broccoli, cut into florets
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine pineapple juice, soy sauce, honey, grated ginger, and minced garlic. Mix well to prepare the glaze.
  3. Place the salmon fillets on one side of a lined sheet pan. Brush the fillets generously with the pineapple glaze.
  4. In a separate bowl, toss the broccoli florets with olive oil, salt, and pepper. Spread them on the other side of the sheet pan.
  5. Bake in the preheated oven for 18-20 minutes, until the salmon is cooked through and the broccoli is tender.
  6. Brush the salmon with more glaze halfway through the cooking time for extra flavor.
  7. Serve immediately, garnishing with additional glaze or fresh herbs if desired.
