This easy sheet pan salmon features a tangy pineapple glaze and is paired with roasted broccoli for a complete meal.
Ingredients
- 4 salmon fillets
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 head broccoli, cut into florets
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine pineapple juice, soy sauce, honey, grated ginger, and minced garlic. Mix well to prepare the glaze.
- Place the salmon fillets on one side of a lined sheet pan. Brush the fillets generously with the pineapple glaze.
- In a separate bowl, toss the broccoli florets with olive oil, salt, and pepper. Spread them on the other side of the sheet pan.
- Bake in the preheated oven for 18-20 minutes, until the salmon is cooked through and the broccoli is tender.
- Brush the salmon with more glaze halfway through the cooking time for extra flavor.
- Serve immediately, garnishing with additional glaze or fresh herbs if desired.
