Ingredients

  • 1 1/2 lbs beef stew meat, cubed
  • 1 large onion, chopped
  • 3 medium potatoes, peeled and diced
  • 2 cups beef broth
  • 2 cups water
  • 1 can chipotle peppers in adobo sauce, chopped
  • 1 cup smoked gouda cheese, shredded
  • 1/2 cup heavy cream
  • 2 tbsp olive oil

Instructions

  2. Add the cubed beef stew meat in a single layer and brown on all sides, about 5-7 minutes.
  3. Once the beef is browned, add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
  4. Add the diced potatoes to the pot, followed by the beef broth, water, and chopped chipotle peppers in adobo sauce. Stir to combine.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for 45 minutes to 1 hour, or until the beef is tender.
