Ingredients

  • 1 cup sushi rice
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 sheets seaweed nori
  • 1/2 lb fresh sushi-grade fish, sliced
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1/4 cup soy sauce
  • 1 tbsp wasabi

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions or using a rice cooker.
  2. In a small microwave-safe bowl, combine the rice vinegar, sugar, and salt. Heat the mixture in the microwave for 30 seconds until the sugar has dissolved.
  3. Transfer the cooked rice to a large wooden or glass bowl. Pour the vinegar mixture over the rice and gently fold it in to ensure even seasoning.
  4. Place a sheet of seaweed nori shiny side down on a bamboo sushi mat. Wet your hands to prevent sticking and spread a thin, even layer of sushi rice over the nori sheet, leaving a margin at the top edge.
  5. Arrange slices of fish, julienned cucumber, and sliced avocado in a line across the center of the rice.
  6. Using the bamboo mat, roll the sushi tightly into a cylinder, applying even pressure to shape the roll.
  7. With a sharp knife, slice the sushi roll into bite-sized pieces. Repeat the process with the remaining ingredients.
  8. Serve the sushi rolls with soy sauce and wasabi for dipping on the side.
