Three Cup Chicken, or San Bei Ji, is a beloved traditional Taiwanese dish made by simmering chicken with equal parts of soy sauce, sesame oil, and rice wine. This technique results in a sauce that is both aromatic and rich, wrapping the tender chicken in a savory and slightly sweet glaze. The dish gains a refreshing touch from fresh basil leaves, which add a subtle herbal aroma. Known for its balanced flavors and fragrant sauce, Three Cup Chicken is a cherished choice for those seeking a satisfying meal with a touch of authenticity from Taiwanese cuisine.

Ingredients

  • 2 lbs chicken (bone-in, skin-on), chopped into pieces
  • 1/4 cup soy sauce
  • 1/4 cup sesame oil
  • 1/4 cup rice wine
  • 1 tbsp sugar
  • 1 inch ginger, sliced
  • 5 cloves garlic, minced
  • 1 cup fresh basil leaves

Instructions

  1. In a bowl, combine soy sauce, sesame oil, rice wine, and sugar. Mix well until sugar is dissolved.
  2. Heat 2 Tbsp of sesame oil in a skillet over medium heat. Add ginger and garlic, and sauté for about 2-3 minutes until fragrant.
  3. Add chicken pieces to the skillet. Cook for about 5-7 minutes until browned on all sides.
  4. Pour in the sauce mixture. Bring it to a simmer, then cover and cook for 15-20 minutes until the chicken is cooked through.
  5. Uncover the skillet and increase the heat slightly to thicken the sauce, stirring occasionally. This should take about 5 minutes.
  6. Add fresh basil leaves and stir to combine. Cook for an additional 1 minute until basil is wilted.
  7. Serve the chicken hot over steamed rice.
