Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup walnuts
  • 1/2 cup mayonnaise
  • 2 tbsp sweetened condensed milk
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 2 cups cornstarch
  • 1/2 cup water
  • 1 cup vegetable oil
  • 1/2 cup sugar

Instructions

  1. Prepare the candied walnuts by combining water and sugar in a medium saucepan. Heat over medium heat until the sugar dissolves.
  2. Add the walnuts to the sugar syrup and cook until the syrup thickens and coats the walnuts, about 5-7 minutes. Remove the walnuts and cool them on a parchment-lined baking sheet.
  3. In a small bowl, mix mayonnaise, sweetened condensed milk, honey, and lemon juice to create the sauce.
  4. Coat the shrimp in cornstarch in a separate bowl. Heat vegetable oil in a frying pan over medium-high heat.
  5. Fry the shrimp in the hot oil until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels if necessary.
  6. Once cooked, toss the shrimp in the prepared sauce until well coated.
  7. Serve the shrimp topped with the cooled candied walnuts.
