  • 1 lb pork shoulder, cubed
  • 1 can coconut milk
  • 2 medium shallots, sliced
  • 3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 2 Tbsp shrimp paste
  • 2 Tbsp palm sugar
  • 1 Tbsp tamarind paste
  • 1 Tbsp fish sauce
  • 4 dried red chilies
  • 1 tsp ground turmeric

Instructions

  1. In a large pot, heat 2 Tbsp of oil over medium heat.
  2. Add the sliced shallots, minced garlic, and grated ginger, and cook for 2 to 3 minutes until fragrant.
  3. Stir in the shrimp paste, palm sugar, tamarind paste, fish sauce, dried chilies, and turmeric.
  4. Add the cubed pork and cook until browned on all sides, about 5 minutes.
  5. Pour in the coconut milk and bring to a simmer.
  6. Cover and let it simmer for about 1 hour, stirring occasionally.
  7. Taste and adjust seasoning with more fish sauce or palm sugar as needed.
  8. Serve with steamed rice or crusty bread.
