  • 2 tbsp fish sauce
  • 2 tbsp vegetable oil
  • 1 tbsp sugar

Instructions

  1. Heat 2 tablespoons of vegetable oil in a wok over medium heat.
  2. Add 2 tablespoons of red curry paste and cook until fragrant, about 2 minutes.
  3. Add the thinly sliced chicken breast and stir-fry until cooked through, approximately 5 minutes.
  4. Pour in 1 cup of coconut milk and bring the mixture to a simmer.
  5. Add the sliced mixed bell peppers, bamboo shoots, 2 tablespoons of fish sauce, and 1 tablespoon of sugar.
  6. Cook until the vegetables are tender, about 5 to 7 minutes.
  7. Stir in 1/4 cup of Thai basil leaves and remove the wok from heat.
  8. Serve the Pad Ped hot alongside steamed rice.
