Ingredients

• 1 Tbsp brown sugar
• 2 Tbsp vegetable oil
• 2 green onions, sliced
• 1/4 cup cilantro leaves, chopped

Instructions

1. In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
2. Add the chopped medium onion and minced garlic, and sauté for 2 to 3 minutes until fragrant.
3. Stir in 1 tablespoon of Thai red curry paste and 1 teaspoon of ground turmeric, cooking for 1 minute until aromatic.
4. Pour in 400 ml of coconut milk and 4 cups of vegetable broth, and bring the mixture to a simmer.
5. Add 300 g of egg noodles, 2 tablespoons of soy sauce, and 1 tablespoon of brown sugar, cooking until the noodles are tender, about 6 to 8 minutes.
6. Serve the soup hot, garnished with sliced green onions and chopped cilantro leaves.
